  • Finally tonight I made what Dmitry has dubbed "Mrs. Laura's Taco Soup."

    It turned out right well, and is, I finally realized, very similar to a
    delicious taco soup Mom makes.  No wonder he likes it! 

    I wish someone would explain to me how he can generally turn up his nose at both beans and corn, yet happily nosh them in this dish?

  • I don't like beans much usually (don't like burritos) but I *LOVE* taco soup.

  • Same way my son likes spaghetti and most kinds of cheese, and loathes lasagna. Only in reverse.

  • Brown a pound of ground beef with a packet of taco seasoning (though nothing hideous happens if you forget to add the taco seasoning until later, like I did).

    Once the beef's browned I'd drain it if there's a lot of grease, but not bother if there isn't much.

    Add two cans of beans (Ranch Style works a treat), and...
    Two cans of corn, and....
    Two cans of stewed tomatoes (I used the "Mexican style")....
    A can of Ro-Tel if you're only feeding Texans, but it's generally omitted in deference to Russian tastebuds (it's why I used the Mexican-style stewed tomatoes - because I left out the Ro-Tel).

    BTW, don't drain any of the canned stuff. You'll probably want to add some more water to make it a more "soupy" consistency, as it is. Let it simmer for a bit, then add - prepare yourself - a packet of Ranch dressing mix.

    Let it simmer a bit more, then serve with dollops of sour cream and lots of tortilla chips.

    This is by memory, for the actual recipe's in the next room, and if I'm wrong I'll correct it.

    I didn't want a lot of soup - not one of my more intelligent decisions, as I fear Dmitry and I will come to blows over the single bowl of leftovers tomorrow - so just used one can of each ingredient, and about 1/2 of the packets. Came out fine.

  • Anne, dear, that's not a whole different that what we in the Northeast tend to call "chili."

    Generally I don't put corn in my chili, but I start with ground beef, add peppers and onions and a pile of garlic, chili powder, cumin and salt and pepper (which are basically the seasonings in that taco seasoning.)

    Then it's tomatoes and beans and more seasoning.

    We call it chili.

    Seems like the same dif to me.
