  • Some people’s notion of “easy” doesn’t match mine.

    Today Yahoo! had their “Seven Easy Suppers” feature on its homepage.  Always being on the lookout for an easy supper, I clicked on the link.  A recipe for Classic Cobb Salad caught my eye, as Don is powerful fond of Cobb Salad, and I’m powerful fond of Don.

    However, I’m not sure I’m quite this fond of him.     Here’s the ingredient list:

    1. 1 teaspoon Dijon mustard
    2. 1 medium clove garlic pressed through a garlic press or minced to paste
    3. 1/4 teaspoon granulated sugar
    4. 1/2 teaspoon table salt
    5. 1/8 teaspoon ground black pepper
    6. 1 teaspoon Worcestershire sauce
    7. 2 teaspoons lemon juice
    8. 2 tablespoons red wine vinegar
    9. 1/2 cup extra-virgin olive oil
    10. 3 large eggs
    11. 3 (6 ounce) boneless, skinless chicken breasts, trimmed of excess fat
    12. Table salt and ground black pepper
    13. 1 large head romaine lettuce washed, dried, and torn into bite-size pieces
    14. 4 ounces watercress, washed, dried, and stemmed
    15. 1 pint grape tomatoes, each tomato halved
    16. 2 medium avocados, pitted and cut into 1/2-inch cubes
    17. 8
      slices bacon, cut crosswise into 1/4-inch pieces, fried over medium
      heat until crisp (about 7 minutes) and drained on paper towels
    18. 2 ounces blue cheese, crumbled
    19. 3 tablespoons minced fresh chives

    You know, avocados don’t just come pitted and cubed, nor does a pint of grape tomatoes halve itself.  Experience has taught me that just the prep time for this “easy” supper would be upwards of an hour, were I to actually wash, dry, tear, stem, pit, mince, and crumble everything the recipe expects me to.  And this doesn’t include broiling, cooling, and cubing the darn skippy chicken.

    Hmmmm…..Papa John’s is having a special on their Italian Trio pizza.  Now THAT’S easy.

  • That’s easy??? For who, Julia Child?

  • If a recipe calls for more than 3 ingredients, I lose interest. 

  • I, too, tend to be addicted to the “Five Ingredients or Fewer” (except they almost inevitably opt to use the grammatically incorrect “Less”) genre of cookbooks.

  • Chili’s To-Go probably has a yummy Cobb Salad, and I am sure is costs much less than all of these ingredients.  And, their meal salads are HUGE!  Now, that is easy.

  • That is NOT an easy recipe. If I had a loved one who was powerful fond of Cobb Salad, maybe I’d make that once a year. But no way would I call it “easy.”

  • Maybe this is actually a simplified version of Real Cobb Salad (whatever that is) so that it’s not easy compared to, say Kraft Macaroni and Cheese, but it’s easy compared to the real thing? 

  • Or this isn’t too difficult mostly if you used already cooked chicken and bacon bits.

    INGREDIENTS

    * 8 slices bacon
    * 3 eggs
    * 1 head lettuce
    * 3 cups chopped, cooked chicken meat
    * 2 tomatoes, seeded and chopped
    * 3/4 cup blue cheese, crumbled
    * 1 avocado – peeled, pitted and diced
    * 3 cups chopped green onions
    * 1 (8 ounce) bottle Ranch-style salad dressing

    DIRECTIONS

    1. Place eggs in a saucepan and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
    2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
    3. Divide shredded lettuce among individual plates.
    4. Evenly divide and arrange chicken, eggs, tomatoes, blue cheese, bacon, avocado and green onions in a row on top of the lettuce.
    5. Drizzle with your favorite dressing and enjoy.

  • Definitely easier, Mom!
